The South Indian food is spicier than North Indian Food.
North Indian dishes always use tomatoes to bring the sour taste
while South Indians use tamarind mostly. Coconut milk is used in
most South Indian curries. In south India both tomatoes and tamarind
are used in cooking. Tomatoes are used in vegetable dishes while
tamarind is being used to cook meat dishes. Another specialty in
South Indian Dishes is the use of Rampe (pandanus) leaves. These are
not eaten but added while cooking to get a wonderful aroma and
flavor.
Day 01 ARRIVE HYDERABAD
On arrival in Hyderabad you will be met and transferred to your
hotel.

The capital is well known for its Nawabi cuisine like Biryani and
Kababs and fiery hot chilies. The glasswork bangles are a must for
any tourist. The glass chandeliers are also beautifully crafted, as
are the stained glass lamps. The city of Hyderabad is built around a
lake, which on one side is called Secunderabad. The impressive
Golconda Fort. Hyderabad is also now growing in leaps and bounds
into another Silicon Valley.

Day 02 HYDERABAD
Morning City Tour of Hyderabad
visiting the Charminar, Birla temple & Salarjung museum. Hyderabadi
Cuisine is a princely legacy of the Nizams, and is a blend of
Mughlai and Persian cuisines. The use of ingredients is carefully
chosen and cooked to the right degree and time. Utmost attention is
given to picking the right kind of spices, meat, rice etc.
Therefore, an addition of a certain herb, spice, condiment, or
combination of all these add a distinct taste and aroma. Hyderabadi
Biryani is Hyderabad's most famous meat-and-rice dish. After your
City Tour you will attend a Demonstration of a Chef Cooking
authentic Hyderabadi Biryani, followed by lunch. Later
that afternoon you will visit the Golconda Fort. In the evening you
will return to the fort to see a Sound and Light Show.

Day 03 HYDERABAD - CHENNAI
This morning flight to Chennai. On
arrival you will be met and transferred to your hotel. Afternoon
sightseeing Tour of Chennai - the capital city of Tamil Nadu
state, Chennai is India’s Southern Gateway City and one of the
biggest centres of trade, and communications. Among the principal
sights are the Fort Saint George, The Marina Beach, and the Snake
Park at Guindy. Evening Dinner at the Rain Tree Restaurant
at the Taj Connemara Hotel including a live Classical Dance
performance.

Day 04 CHENNAI
After breakfast, proceed for a full
day Excursion to Mahabalipuram and Kanchipuram.

Day 05 CHENNAI – KOCHI ( COCHIN )
Morning flight to Kochi You will be
met on arrival and transferred to your hotel. After lunch you will
be taken on a a Harbour Cruise around the fascinating port of
Cochin.
Kerala Cusine is midly flavored, gently cooked and has a certain
genteel delicacy on the stomach. An example is the rich biriyanis of
the northern parts of Kerala are the Malabar Biriyanis. Malabar
biriyani was brought across the Indian Ocean by Arab Seafarers. It
should be eaten hot, with crispy, crunchy pappads. Pulaos, pilaffs
and biriyanis are meats spices and onions slowly steam cooked in
boiled rice. favourite item. This evening you will attend a
Cooking Demonstration by a chef of typical Kerala Malabar Cuisine,
followed by dinner.

Day 06 COCHIN
Morning sightseeing Tour of Kochi
(Cochin) – an important port city with a famous Jewish settlement
and Synagogue, the Dutch Palace, the Chinese Nets, the Church of
Saint Francis and the Tomb of Vasco da Gama. In the afternoon attend
a cooking dmonstration by a chef of typical Kerala Malabar seafood
cuisine.
Rest of the day free. In the evening you will be taken to see a
traditional Kathakali Dance Drama performance at one of the
auditoriums.
Overnight in Cochin.
Day 07 COCHIN – PERIYAR
After breakfast drive to Periyar and on arrival check-in at the
resort. Periyar Sanctuary was the earliest sanctuary to be set up
in India in 1934. Amongst the animals to be seen here are wild
elephants, which can be seen and photographed at close quarters,
wild boar, sambar, tier, leopard, wild dog and languor monkeys.
Afternoon visit to the park by boat.

Day 08 PERIYAR
Early morning visit to the park by
boat on man-made Periyar Lake. In the afternoon you will see a
cooking demonstration by a chef of Typical Spice Route Cuisine.

Day 09 PERIYAR - ALLEEPPEY
After an early breakfast, drive to
Alleppey Jetty to board a Houseboat for your Backwaters Cruise.
Some of the most scenic backwaters of Kerala are to be seen near
Alleppey. Evening cooking demonstration by your houseboat cook.
Overnight on board the House Boat.
Day 10 KUMRAKOM.
Arrive Kumarakom and check in at the resort. Kumarakom a unique
backwater destination situated on the banks of the Vembanadu Lake.
Rest of the day free at leisure.
Optional sunrise and sunset boat cruise on the backwaters or get a
rejuvenation Ayurveda massage at the Ayurveda center of the resort.
Overnight at Kumarakom.
Day 11 KUMARAKOM - KOCHI - GOA
Morning transfer from the resort to
Cochin airport to your flight to Goa. You will be met on arrival and
transferred to your hotel. Rest of day at leisure on the golden
sandy beaches of Goa.

Day 12 GOA
Morning city Tour of Goa visiting the Basilica of Bom Jesus
built in the 16th century, where in is enshrined in an
ornate silver casket, the body of St. Francis Xavier. Later visit
the most popular and famous of all churches in Goa – Saint
Cathedral, the Church of Saint. Francis of Assisi, Saint Cajetan
Church, built in the style of St. Peters Basilican in Rome and the
Church of the Rosary and Nunnery of Saint Monica. Afternoon cooking
demonstration by a chef of Typical Goanese Cuisine.

Day 13 GOA - MUMBAI
Morning transfer to the airport to
board your flight to Mumbai. You will be met on arrival and
transferred to hotel. In the afternoon take a City Tour of Mumbai
visiting the Malabar Hills offering fine views of the Marine Lines
and Chowpatty Beach, Kamla Nehru Park and Marine Drive.
Overnight in Mumbai.
Day 14 DEPART MUMBAI
Morning: Excursion to Elephanta Caves – from the Gateway of
India take a motor launch to see the 7th century
sculptures of manifestations of Shiva. After the visit drive to the
Rajyog Restaurant in Bandra for a cooking demonstration.
Attend a cooking session (1500 to 1830 hrs) demonstrated by a chef
of authentic Maharashtrain Cuisine. After the session have
an early dinner at the restaurant and drive back to your hote before
transferring to the airport to board your flight home.
